Blackberry turnovers are a delicious, flaky pastry filled with a sweet and tangy blackberry filling, perfect for breakfast, a snack, or dessert.

Ingredients

2 cups fresh blackberries

1/4 cup sugar

1 tablespoon cornstarch

1 teaspoon lemon juice

1/4 teaspoon vanilla extract

1 package of puff pastry (usually 2 sheets)

1 egg (for egg wash)

Powdered sugar (for dusting, optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a saucepan, combine blackberries, sugar, cornstarch, lemon juice, and vanilla extract. Cook over medium heat, stirring frequently, until the blackberries start to break down and the mixture thickens (about 5-7 minutes).
  3. Remove from heat and let the blackberry mixture cool slightly.
  4. Roll out the puff pastry sheets on a lightly floured surface. Cut each sheet into 4 squares, making a total of 8 squares.
  5. Spoon a small amount of the blackberry mixture (about 1-2 tablespoons) into the center of each square.
  6. Fold each square into a triangle, pinching the edges together to seal them. You can use a fork to press the edges down for a crimped look.
  7. In a small bowl, whisk the egg to create an egg wash. Brush the tops of the turnovers with the egg wash to give them a golden color when baked.
  8. Place the turnovers on the prepared baking sheet and bake for 20-25 minutes, or until golden brown and puffed up.
  9. Once baked, allow the turnovers to cool slightly before dusting with powdered sugar (optional) and serving.

Notes

  • Berry Blend: Swap out the blackberries for raspberries, blueberries, or strawberries, or use a combination of different berries.
  • Glaze: Instead of powdered sugar, drizzle a simple glaze made of powdered sugar and milk over the turnovers for extra sweetness.
  • Spiced Filling: Add a pinch of cinnamon or nutmeg to the blackberry filling for a warm, spiced flavor.
  • Storage: Store leftover turnovers in an airtight container at room temperature for up to 2 days. If you want to keep them longer, refrigerate them for up to 5 days.
  • Reheating: To reheat, place the turnovers in a 350°F (175°C) oven for 5-7 minutes or until warmed through. You can also reheat them in the microwave for 20-30 seconds, though they may lose some of their crispiness.
