Biscoff Tiramisu is a delightful fusion of the classic Italian dessert with the rich, caramelized flavor of Biscoff cookies, offering a creamy, spiced indulgence topped with a crunchy finish.

Ingredients

30 Biscoff cookies (plus extra for topping)

½ cup strong brewed coffee or espresso, cooled

2 tbsp Biscoff spread (optional, for layering)

8 oz mascarpone cheese, softened

1 cup heavy whipping cream

⅓ cup powdered sugar

1 tsp vanilla extract

2 tbsp Biscoff spread, melted (for drizzling)

Crushed Biscoff cookies (for garnish)

Instructions

  1. In a large bowl, beat the mascarpone cheese, powdered sugar, and vanilla extract until smooth.
  2. In a separate bowl, whip the heavy cream until stiff peaks form.
  3. Gently fold the whipped cream into the mascarpone mixture until well blended and fluffy.
  4. Pour the cooled coffee into a shallow bowl. Quickly dip each Biscoff cookie into the coffee for 1-2 seconds.
  5. In an 8x8-inch dish, arrange a layer of soaked Biscoff cookies and spread half of the cream filling evenly over them.
  6. If using, drizzle or dollop Biscoff spread lightly on top.
  7. Repeat with another layer of dipped cookies and the remaining cream mixture.
  8. Cover and refrigerate for at least 4 hours, or overnight for the best texture and flavor.
  9. Before serving, drizzle melted Biscoff spread over the top and sprinkle with crushed Biscoff cookies.

Notes

  • If you prefer a stronger Biscoff flavor, increase the amount of Biscoff spread in the cream filling or layer between the cookies.
  • Add a splash of coffee liqueur or rum to the coffee mixture for a boozy twist.
  • For a gluten-free version, use gluten-free Biscoff cookies.
