This Melt-In-Your-Mouth Chicken Breast recipe features juicy chicken coated in a creamy blend of mayonnaise, Parmesan cheese, and seasonings, baked to golden perfection. Perfect for weeknight dinners or special occasions.

Ingredients

4 boneless, skinless chicken breasts (about 1.52 pounds), pounded to even thickness

½ cup mayonnaise (or Greek yogurt for a lighter option)

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

1 teaspoon paprika

Salt and pepper to taste

Optional: Fresh parsley or chives for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place the chicken breasts between plastic wrap or parchment paper and pound to an even thickness. Season with salt and pepper and place in a greased or parchment-lined baking dish.
  3. In a bowl, mix mayonnaise, Parmesan, garlic powder, onion powder, Italian seasoning, and paprika until smooth.
  4. Spread the mixture evenly over the chicken breasts to coat them completely.
  5. Bake for 25–30 minutes, or until chicken reaches an internal temperature of 165°F (75°C) and the top is golden brown and bubbly.
  6. Optional: Broil for 2–3 minutes for a crispier top, watching closely to avoid burning.
  7. Let rest for 5 minutes. Garnish with chopped parsley or chives.
  8. Serve hot with your choice of sides like vegetables, mashed potatoes, or salad.

Notes

  • Use Greek yogurt instead of mayonnaise for a lighter option.
  • Add shredded mozzarella or cheddar for a cheese twist.
  • Sprinkle breadcrumbs on top for extra crunch.
  • Chicken thighs can be used instead of breasts.
  • Store leftovers in the fridge for up to 3 days or freeze for up to 3 months.
