These Key Lime Pie Bars offer a tangy, creamy twist on classic key lime pie with a buttery graham cracker crust, smooth key lime filling, and fluffy whipped cream topping, perfect for any occasion.

Ingredients

230g graham crackers (~16 full sheets)

½ cup melted butter (113g)

2 cans sweetened condensed milk (28oz)

¾ cup key lime juice (180g)

1 tbsp key lime zest (2-3 limes)

2 tsp vanilla extract

⅔ cup sour cream or yogurt (160g)

2 egg yolks

1½ cups heavy cream, chilled (360g)

2 tbsp granulated sugar

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9x9-inch square baking pan with parchment paper, extending above edges for easy removal.
  2. Grind graham crackers into fine crumbs using a food processor. Mix with melted butter until combined. Press firmly into bottom of pan.
  3. Bake crust for 8-10 minutes until golden. Remove and set aside.
  4. In a bowl, whisk together sweetened condensed milk, key lime juice, zest, vanilla extract, and sour cream until smooth. Add egg yolks and whisk to combine.
  5. Pour filling over baked crust, spreading evenly.
  6. Reduce oven temperature to 325°F (163°C). Bake bars for 17-18 minutes until edges are set but center slightly jiggles.
  7. Cool bars to room temperature, then refrigerate at least 4 hours or overnight to set.
  8. In a chilled bowl, whip heavy cream and sugar until stiff peaks form.
  9. Spread whipped cream evenly over set bars. Lift bars from pan using parchment paper and cut into squares. Serve chilled.
