A cheesy, creamy, and hearty casserole made with tender chicken, broccoli, and rice. This comfort food classic is perfect for weeknight dinners or gatherings.

Ingredients

2 cups cooked chicken, chopped

1 cup cooked rice

2 cups broccoli florets (steamed or cooked)

1 can cream of mushroom soup (or cream of chicken)

1 cup shredded cheddar cheese

1/2 cup milk

1/4 cup breadcrumbs (optional)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1 tablespoon olive oil or butter (for greasing)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with olive oil or butter.
  2. In a large mixing bowl, combine the cooked chicken, rice, broccoli, cream of mushroom soup, milk, garlic powder, onion powder, and half of the shredded cheddar cheese. Stir everything together until well combined.
  3. Season the mixture with salt and pepper to taste.
  4. Transfer the mixture to the prepared baking dish and spread it out evenly.
  5. Sprinkle the remaining shredded cheddar cheese on top. If you're using breadcrumbs, sprinkle them over the cheese for an extra crunch.
  6. Cover the casserole with foil and bake for 25-30 minutes.
  7. After 25-30 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
  8. Remove from the oven and let it cool for a few minutes before serving.

  • For a healthier version, use brown rice instead of white rice.
