Beef and Rotini in Garlic Parmesan Sauce is a rich, comforting pasta dish combining tender rotini, savory ground beef, and a creamy garlic Parmesan sauce. It's a quick, one-pan meal perfect for busy weeknights or casual family dinners.

Ingredients

1 lb ground beef

12 oz rotini pasta

1 tbsp olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup low-sodium beef broth

1 tbsp flour (optional, for thickening)

Salt and freshly ground black pepper, to taste

1 tsp Italian seasoning (optional)

Fresh chopped parsley, for garnish

Instructions

  1. Bring a pot of salted water to a boil and cook rotini pasta until al dente. Drain and reserve 1/2 cup of pasta water.
  2. In a large skillet, cook ground beef over medium-high heat until browned. Season with salt and pepper, then remove from skillet and set aside.
  3. In the same skillet, heat olive oil and sauté minced garlic for about 1 minute until fragrant.
  4. Add beef broth to the skillet and bring to a simmer.
  5. Stir in heavy cream and Parmesan cheese, whisking until smooth and melted.
  6. If a thicker sauce is desired, stir in flour and cook for another minute.
  7. Return the ground beef to the skillet, then add the cooked rotini and stir to coat. Add reserved pasta water as needed to loosen the sauce.
  8. Stir in Italian seasoning (if using) and adjust salt and pepper to taste.
  9. Serve hot, garnished with chopped parsley and freshly cracked black pepper.

Notes

  • Use 80/20 ground beef for optimal flavor and texture.
  • Add crushed red pepper for a spicy version.
  • Substitute half-and-half or evaporated milk for a lighter sauce.
  • Great with added veggies like spinach or mushrooms.
  • Store leftovers for up to 4 days in the fridge; reheat with a splash of milk or broth.
