With just 35 minutes of cooking time, it’s a perfect weeknight dinner.
1 pound lean ground beef
½ cup diced onion
6 cups beef broth
14 ounces canned diced tomatoes with juices (1 can)
2 tablespoons tomato paste
1 teaspoon Worcestershire sauce
½ teaspoon dried oregano
½ teaspoon dried basil
1 cup elbow macaroni (or any short pasta)
2 cups mixed vegetables (fresh or frozen)
In a large pot, brown the ground beef and diced onion over medium heat. Drain any excess fat.
Add the canned diced tomatoes, beef broth, tomato paste, Worcestershire sauce, oregano, and basil. Stir to combine and bring to a boil.
Once boiling, reduce the heat and simmer for 10 minutes.
Add the elbow macaroni and mixed vegetables. Continue to simmer until the pasta is tender, about 10 minutes.
Serve hot, optionally topped with parmesan cheese.
Swap out elbow macaroni for other short pasta types, such as fusilli, shells, or fun shapes for kids.
Add additional vegetables like corn, peas, carrots, or potatoes for extra texture and flavor.
Spice it up with red chili flakes, taco seasoning, or chili powder for a zesty twist.
