This hearty Beef and Macaroni Soup, also known as Cowboy Soup, is a comforting and flavorful dish that combines savory ground beef, pasta, and vegetables in a delicious tomato-based broth. Ingredients

1 pound lean ground beef

½ cup diced onion

6 cups beef broth

14 ounces canned diced tomatoes with juices (1 can)

2 tablespoons tomato paste

1 teaspoon Worcestershire sauce

½ teaspoon dried oregano

½ teaspoon dried basil

1 cup elbow macaroni (or any short pasta)

2 cups mixed vegetables (fresh or frozen)

Instructions

  • In a large pot, brown the ground beef and diced onion over medium heat. Drain any excess fat.

  • Add the canned diced tomatoes, beef broth, tomato paste, Worcestershire sauce, oregano, and basil. Stir to combine and bring to a boil.

  • Once boiling, reduce the heat and simmer for 10 minutes.

  • Add the elbow macaroni and mixed vegetables. Continue to simmer until the pasta is tender, about 10 minutes.

  • Serve hot, optionally topped with parmesan cheese.
