Barbecue Chicken Tostadas are a delicious Mexican-inspired dish featuring crispy tostada shells topped with smoky barbecue chicken, fresh veggies, and melted cheese, perfect for a quick meal or snack.

Ingredients

  • Chicken breast or thighs, cooked and shredded
  • Barbecue sauce
  • Tostada shells
  • Shredded cheese (cheddar, Monterey Jack, or a blend)
  • Black beans (optional)
  • Corn kernels (optional)
  • Diced tomatoes
  • Sliced avocado or guacamole
  • Chopped cilantro
  • Sliced green onions
  • Lime wedges
  • Sour cream or Mexican crema
  • Jalapeños (optional for heat)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix the shredded cooked chicken with barbecue sauce until well coated.
  3. Arrange the tostada shells on a baking sheet.
  4. Spread a layer of black beans and corn (if using) on each shell for extra texture.
  5. Top each tostada with the barbecue chicken mixture.
  6. Sprinkle shredded cheese evenly over the chicken.
  7. Bake in the oven for 8-10 minutes or until the cheese melts and the tostadas are crispy.
  8. Remove from the oven and add fresh toppings like diced tomatoes, sliced avocado or guacamole, chopped cilantro, green onions, and jalapeños if desired.
  9. Serve with a dollop of sour cream or Mexican crema and lime wedges on the side.

Notes

  • Use pulled beef instead of chicken for a different protein twist.
  • Swap barbecue sauce for smoky chipotle sauce for extra heat and flavor.
  • Add pickled red onions or jalapeños for more tanginess and spice.
  • Use store-bought rotisserie chicken to save time.
  • Make it vegetarian by replacing chicken with seasoned grilled vegetables or beans only.
  • Store leftovers in an airtight container in the refrigerator up to 2 days; reheat in oven to keep crisp.
  • Assemble tostadas just before serving to maintain crunchiness.
