Ingredients

3 medium golden potatoes (skin on)

1 tablespoon olive oil (plus more if needed)

4 oz beef (cut into small pieces)

1-2 garlic cloves, minced

1 tablespoon pure maple syrup

Parsley for garnish

Instructions

  1. Freeze the beef for easier chopping.
  2. Wash the potatoes and cut them into medium-sized square pieces. Place the diced potatoes in a bowl of water to prevent browning.
  3. Heat 1-2 tablespoons of oil in a large skillet over medium-high heat. Once hot, drain the potatoes and add them to the skillet.
  4. Season the potatoes with salt, pepper, and Old Bay to taste. Cook for about 10 minutes, stirring occasionally until the potatoes are golden brown. If necessary, add more oil.
  5. Add the chopped beef to the skillet. Let it cook for 5-6 minutes until browned and crispy.
  6. Reduce the heat to medium-low, add the minced garlic, and toss the ingredients. Cook until fragrant, about 1 minute.
  7. Add parsley, adjust seasoning, and drizzle maple syrup over the potatoes. Cook for another minute to caramelize the syrup.
  8. Serve in a warm bowl, optionally topping with a sunny side-up egg.
