These soft and chewy banana cookies are a delicious way to use up ripe bananas! Made with simple ingredients, they are easy to prepare and perfect for a snack or dessert. Add chocolate chips or nuts for extra flavor.

Ingredients

  • 2 ripe bananas, mashed
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/2 cup butter, softened
  • 1 egg

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream butter and sugar until light and fluffy.
  3. Add mashed bananas, egg, and vanilla extract, then mix well.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually add dry ingredients to the banana mixture, stirring until combined.
  6. Drop spoonfuls of dough onto the prepared baking sheet, spacing them 2 inches apart.
  7. Bake for 10-12 minutes or until edges turn golden brown.
  8. Let cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
