This vibrant and refreshing salad combines sweet watermelon and ripe blackberries with a tangy balsamic glaze, fresh mint, and optional olive oil for added richness. A perfect side dish for warm weather gatherings or a healthy, light meal.

Ingredients

4 cups watermelon, cubed

1 cup blackberries

1 tablespoon fresh mint leaves, chopped

2 tablespoons balsamic vinegar

1 tablespoon honey or maple syrup

Salt and pepper to taste

1 tablespoon olive oil (optional)

Instructions

  1. In a large bowl, combine the cubed watermelon and blackberries.
  2. In a small saucepan over medium heat, add the balsamic vinegar and bring to a simmer. Stir occasionally and cook for 3-4 minutes until the vinegar reduces by about half, thickening slightly. (For a sweeter glaze, add honey or maple syrup to taste.)
  3. Drizzle the balsamic reduction over the watermelon and blackberries.
  4. Gently toss to combine, being careful not to crush the delicate fruit.
  5. Sprinkle with fresh mint leaves and a pinch of salt and pepper to taste.
  6. For an extra touch, drizzle with a little olive oil if desired for added richness.
  7. Serve immediately or refrigerate for 30 minutes for a chilled option.
