Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
  • 1/4 cup melted butter, slightly cooled
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup pumpkin puree

For the glaze:

  • 1 cup powdered sugar
  • 1 tablespoon milk

Instructions

  • Preheat the oven to 350°F. Grease two 24-cup mini muffin pans with non-stick spray or bake in batches if using one pan.
  • In a large bowl, whisk together the flour, sugar, baking powder, pumpkin pie spice, and salt.
  • In a separate bowl, whisk together the melted butter, vanilla extract, and egg.
  • Add the wet ingredients to the dry ingredients and stir until well combined.
  • Stir in the pumpkin puree until fully incorporated.
  • Scoop a tablespoon of batter into each muffin cup.
  • Bake for about 15 minutes or until set but slightly undercooked. Let cool slightly, then transfer to a parchment-lined baking sheet.
  • Turn on the broiler and in a medium bowl, whisk together the powdered sugar and milk to make a smooth glaze.
  • Dip the tops of each fritter into the glaze and place back on the baking sheet.
  • Broil for 3-5 minutes until the glaze crisps and caramelizes.
  • Brush remaining glaze over the fritters and let set for 15 minutes before serving.

Notes

  • You can add nuts like walnuts or pecans to the batter for extra crunch.
  • For a spicier flavor, increase the pumpkin pie spice or add a pinch of cinnamon and nutmeg.
  • If you prefer, swap the glaze for a maple syrup glaze for a richer taste.
