Ingredients

1 cup pumpkin puree

1 tsp pumpkin pie spice

1/2 cup sugar

1 1/2 cups all-purpose flour

2 tsp baking powder

1/2 tsp salt

1/2 cup butter (melted)

1 egg

1 tsp vanilla extract

1/2 cup powdered sugar

2 tbsp milk

Instructions

  • Preheat oven to 350°F (175°C) and grease two 24-cup mini muffin pans.

  • In a large bowl, mix flour, sugar, baking powder, pumpkin pie spice, and salt.

  • In a separate bowl, whisk together melted butter, vanilla, and egg.

  • Add the wet ingredients to the dry ingredients, stirring until crumbly.

  • Mix in pumpkin puree until the batter is smooth.

  • Scoop a heaping tablespoon of batter into each muffin cup.

  • Bake for 15 minutes, until slightly undercooked.

  • Let fritters cool slightly and transfer to a lined baking sheet.

  • Set oven to broil.

  • Whisk powdered sugar and milk to make the glaze.

  • Dip the tops of the fritters in the glaze and return to the baking sheet.

  • Broil for 3-5 minutes, until golden and crispy.

  • Brush the remaining glaze on top and let rest for 15 minutes before serving.
