Baked Feta Potatoes

Baked feta potatoes are a Mediterranean-inspired side dish combining crispy roasted yellow potatoes with creamy baked feta, roasted garlic, lemon, and fresh herbs for a flavorful and comforting meal.

Ingredients

1.5 pounds (680g) yellow potatoes, washed and diced into 1-inch cubes

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and black pepper, to taste

1 block (200g) feta cheese

1 whole head of garlic, top sliced off

1 lemon, quartered

1 tablespoon honey

¼ cup (20g) fresh basil, chopped

Instructions

  1. Preheat your oven to 200°C (390°F). Wash and cube the potatoes, then par-boil them for no more than 10 minutes to soften slightly. Drain and allow them to steam dry for a couple of minutes.
  2. In a large baking dish, toss the potatoes with olive oil, oregano, thyme, salt, and pepper until evenly coated. Add the whole head of garlic (top sliced off) and the quartered lemon to the dish. Nestle the block of feta cheese in the center.
  3. Place the baking dish in the oven and roast for 30 minutes, or until the potatoes begin to turn golden and crispy.
  4. After 30 minutes, remove the garlic and lemon from the dish. Squeeze the juice of the lemon over the potatoes and drizzle with honey. Return the dish to the oven and roast for an additional 15 minutes, or until the feta is slightly golden and softened.
  5. Once roasted, squeeze the garlic cloves out of their skins and mash them with a fork. Gently stir the mashed garlic and chopped fresh basil into the potatoes. Serve warm.

Notes

  • Add a pinch of red pepper flakes for a spicy kick.
  • Toss in other vegetables like cherry tomatoes, bell peppers, or onions for variety.
  • Experiment with herbs like rosemary or parsley for a different flavor.
  • Try goat cheese or ricotta as an alternative to feta for a cheesy upgrade.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat in the oven at a low temperature or microwave until warmed through.
  • To make vegan, substitute feta with plant-based feta and honey with maple syrup.
