Ingredients

  • 4 pounds chicken wings, drumettes and flats separated
  • 1 tablespoon baking powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

For Blue Cheese Sauce:

  • 1/2 cup Greek yogurt
  • 1/4 cup mayonnaise
  • 1/2 cup crumbled blue cheese
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste

For Honey Sriracha Sauce:

  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1/4 cup Sriracha sauce
  • 1/4 cup honey
  • 1/2 teaspoon chili flakes
  • Pinch of salt

For Honey Mustard Sauce:

  • 1/4 cup Dijon mustard
  • 1/4 cup honey
  • 1 tablespoon mayonnaise
  • 1 teaspoon lemon juice

Instructions

  • Prepare the Wings: Preheat the oven to 425°F (218°C). Line a baking sheet with foil and place a greased wire rack on top. Pat the wings dry with paper towels.
  • Season the Wings: In a bowl, mix baking powder, smoked paprika, chili powder, salt, black pepper, garlic powder, and onion powder. Toss the wings in the mixture until evenly coated.
  • Bake: Arrange wings on the rack without touching. Bake for 20 minutes, flip, then bake another 20 minutes. For extra crispiness, bake an additional 10-20 minutes.
  • Make the Blue Cheese Sauce: Mash blue cheese into Greek yogurt and mayonnaise. Stir in lemon juice, garlic, Worcestershire sauce, salt, and pepper. Adjust seasoning.
  • Make the Honey Sriracha Sauce: Melt butter in a saucepan over medium heat. Add garlic, then stir in Sriracha, honey, chili flakes, and salt. Simmer for 2 minutes, then cool.
  • Make the Honey Mustard Sauce: Mix Dijon mustard, honey, mayonnaise, and lemon juice in a bowl until smooth.
  • Serve: Once wings are golden and crispy, remove from the oven and serve immediately with sauces.

  • Spicy Garlic Parmesan: Toss wings in melted butter, minced garlic, and grated Parmesan.
