Packed with creamy avocado, sweet mango, and crunchy pine nuts, it’s a perfect side for summer gatherings or a light lunch. The honey-lime dressing adds a zesty touch to this vibrant and colorful salad.

Ingredients

Dressing:

3 tablespoons freshly squeezed lime juice

¼ cup extra virgin olive oil

2 tablespoons honey

Salt and pepper to taste

Salad:

5 oz arugula

1 ripe mango, peeled, pit removed, diced

1 avocado, peeled, pitted, and diced

¼ cup red onions, thinly sliced

⅓ cup pine nuts, toasted

Instructions

  • In a medium bowl or mason jar, whisk together lime juice, olive oil, and honey until emulsified.

  • In a large serving bowl, combine arugula, diced mango, avocado, and red onions.

  • Drizzle the dressing over the salad (you don’t need to use all of it), and toss to combine.

  • Top with toasted pine nuts and season with salt and pepper to taste.

Notes

  • For a protein boost, you can add grilled shrimp, chicken, or salmon.

  • Swap pine nuts for toasted pumpkin seeds if needed.
