Ingredients

  • 6 large hard-boiled eggs, peeled and halved
  • 1 ripe avocado, peeled and pitted
  • 2 tablespoons fresh lime juice
  • 2 tablespoons finely chopped red onion
  • 2 tablespoons chopped fresh cilantro
  • 1 teaspoon garlic powder
  • Salt and freshly ground black pepper, to taste
  • Optional garnishes: additional cilantro, red onion, or crispy beef

Instructions

  1. Prepare the Eggs: Slice the hard-boiled eggs in half lengthwise. Gently remove the yolks and place them in a medium mixing bowl. Arrange the egg whites on a serving platter.
  2. Make the Filling: Add the avocado, lime juice, red onion, cilantro, garlic powder, salt, and pepper to the yolks. Mash with a fork until smooth and well combined.
  3. Fill the Egg Whites: Spoon or pipe the avocado mixture into the hollowed-out egg whites.
  4. Garnish: Add your choice of garnishes such as extra cilantro, red onion, or crispy beef. Serve immediately or refrigerate until ready to enjoy.

Notes

  • Storage: These deviled eggs are best consumed fresh, but can be stored in the refrigerator for up to 2 days. The avocado filling may darken over time.
  • Serving Tip: Let the deviled eggs sit at room temperature for 10 minutes before serving for optimal flavor.
  • Variations: Add chopped jalapeños for heat, crispy beef for crunch, or experiment with herbs like dill and parsley for a fresh twist.
