Ingredients

  • 3 medium-sized apples, peeled, cored, and chopped (Granny Smith or Honeycrisp work well)
  • 1/2 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 tablespoon unsalted butter

For the enchilada assembly:

  • 6-8 large flour tortillas
  • 1/2 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • Whipped cream or vanilla ice cream for serving (optional)

Instructions

  1. Prepare the Apple Filling:
    Preheat your oven to 350°F (175°C). In a large saucepan, melt butter over medium heat. Add chopped apples, brown sugar, cinnamon, nutmeg, and lemon juice. Cook for 5-7 minutes until apples soften. Set aside.

  2. Assemble the Enchiladas:
    Pour melted butter into a shallow dish and mix sugar and cinnamon in a separate bowl. Lay a tortilla on a flat surface, fill with apple mixture, and roll tightly. Place seam side down in a greased 9x13-inch dish. Repeat with remaining tortillas and apple mixture.

  3. Make the Topping Sauce:
    In a saucepan, melt butter and stir in sugar and cinnamon. Cook until sugar dissolves, then pour over the tortillas in the baking dish.

  4. Bake:
    Place in the oven and bake for 25-30 minutes until tortillas are golden and bubbly.

  5. Serve:
    Allow to cool slightly and serve with whipped cream or vanilla ice cream.
