2 cups all-purpose flour

2 large eggs (room temperature)
½ cup brown sugar (packed)
¼ cup white sugar
½ cup melted butter
1 teaspoon vanilla extract
2 cups grated apples (peeled or unpeeled)
1 cup chopped walnuts (optional)
2 tablespoons cinnamon sugar for topping
Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
In a large bowl, whisk together eggs, brown sugar, and white sugar for about 90 seconds.
Mix in melted butter and vanilla extract for 30 seconds.
Sift in flour, baking powder, baking soda, cinnamon, and salt. Stir until just combined.
