Ingredients

1 lb ground beef

1 medium onion, chopped

2 garlic cloves, minced

2 large potatoes, diced

2 large carrots, diced

2 celery stalks, diced

1 cup corn kernels (fresh or frozen)

1 can (14.5 oz) diced tomatoes with juice

1 cup beef broth

1 ½ cups shredded cheddar cheese

Salt, to taste

Black pepper, to taste

1 tsp dried thyme

1 tsp dried rosemary

2 tbsp olive oil

Instructions

  • Preheat the Oven: Set your oven to 375°F (190°C).

  • Cook Ground Beef: Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned. Remove the beef and set aside.

  • Sauté Aromatics: In the same skillet, sauté the chopped onion and minced garlic until the onion becomes translucent (about 3-4 minutes).

  • Add Vegetables: Stir in the diced potatoes, carrots, and celery. Cook for 5 minutes, stirring occasionally.

  • Combine Ingredients: Add the corn, cooked beef, diced tomatoes (with juice), and beef broth. Season with salt, pepper, thyme, and rosemary. Mix well.

  • Bake: Transfer the mixture to a greased 9x13-inch baking dish. Cover with aluminum foil and bake for 30 minutes.

  • Add Cheese: Remove the foil, sprinkle shredded cheddar cheese on top, and bake for another 10-15 minutes, or until the cheese is bubbly and golden.

  • Serve: Let the bake rest for a few minutes before serving.

Notes

  • For a lighter version, swap the ground beef with ground turkey or chicken.

  • Add other vegetables like zucchini or bell peppers for extra flavor.

  • Adjust the cheese based on preference, such as mozzarella or pepper jack.
