Air Fryer Zucchini is a quick and healthy side dish that delivers crispy, golden bites with minimal effort. This recipe combines fresh zucchini slices with a flavorful seasoning blend and a touch of parmesan, all cooked to perfection in the air fryer. It's a delightful way to enjoy vegetables without compromising on taste or texture.

Ingredients

2 medium zucchini, cut into ¼-inch slices

3 teaspoons olive oil

2 tablespoons grated parmesan cheese

1 teaspoon chili powder

1 teaspoon garlic powder

1 teaspoon Italian seasoning

½ teaspoon kosher salt

¼ teaspoon ground black pepper

Instructions

  1. Slice the zucchini into ¼-inch thick rounds and place them in a mixing bowl.
  2. Drizzle olive oil over the zucchini slices and toss to coat evenly.
  3. In a small bowl, mix together the parmesan, chili powder, garlic powder, Italian seasoning, salt, and pepper. Sprinkle this mixture over the zucchini and toss until well coated.
  4. Set your air fryer to 400°F (200°C) and allow it to preheat.
  5. Place the seasoned zucchini slices in the air fryer basket in a single layer, avoiding overlap for even cooking.
  6. Air fry for 15-17 minutes, flipping the slices halfway through, until they are golden and crispy.
  7. Remove from the air fryer and serve immediately.

Notes

  • Storage: Allow the zucchini to cool completely, then store in an airtight container in the refrigerator for up to 2 days.
  • Reheating: To maintain crispiness, reheat in the air fryer at 350°F (175°C) for 3-4 minutes. Alternatively, microwave for 1-2 minutes, though this may result in a softer texture.
  • Cheesy Delight: Add extra parmesan or a sprinkle of mozzarella for a cheesier flavor.
  • Spicy Kick: Incorporate a pinch of cayenne pepper or red pepper flakes for added heat.
  • Herb Infusion: Experiment with different herbs like thyme or rosemary for a unique twist.
  • Lemon Zest: Add a touch of lemon zest before serving for a refreshing citrus note.
