Ingredients

For the Chicken:

  • 3 chicken breasts, cut in half and flattened thin
  • 1/2 cup flour
  • 2 eggs
  • 1 tbsp classic yellow mustard
  • Salt, pepper, and paprika to taste
  • 1 box panko bread crumbs

For the Honey Mustard Sauce:

  • 1/4 cup mayonnaise
  • 2 tbsp Dijon mustard
  • 1/4 cup honey
  • 1 tsp lemon juice
  • 1/4 tsp cayenne pepper

Instructions

  1. Season the chicken breasts with salt, pepper, and paprika on both sides.
  2. Set up a breading station: In one shallow bowl, place the flour. In another, whisk eggs with yellow mustard. In a third bowl, add panko breadcrumbs.
  3. Dredge the chicken in flour, dip in the egg mixture, then coat with panko breadcrumbs. Press breadcrumbs for an even coating.
  4. Refrigerate the breaded chicken for 10-20 minutes.
  5. Preheat the air fryer to 400°F. Place chicken in the air fryer basket, avoiding overlap.
  6. Air fry for 15 minutes, flip, and cook for another 12-15 minutes until the chicken is crispy and fully cooked.
  7. While chicken cooks, combine mayonnaise, Dijon mustard, honey, lemon juice, and cayenne pepper in a bowl to make the sauce.
  8. Once chicken is done, remove from the air fryer, cover with foil, slice into strips, and drizzle with the honey mustard sauce. Serve and enjoy!
