A quick and easy Air Fryer Chicken Quesadilla with shredded chicken, salsa, cheese, and flour tortillas, crispy and flavorful in under 30 minutes.

Ingredients

1 cup shredded chicken

1/4 cup salsa

1/2 cup shredded cheese (Monterey Jack, Mexican blend, cheddar, or pepper Jack)

2 flour tortillas

Instructions

  1. In a bowl, combine shredded chicken with salsa, mixing well.
  2. Lay one flour tortilla flat and spread half the chicken mixture over one half.
  3. Sprinkle half the shredded cheese over the chicken.
  4. Fold the tortilla in half to enclose the filling.
  5. Use toothpicks to secure the edges.
  6. Preheat air fryer to 400°F (200°C) and lightly spray the basket with nonstick spray.
  7. Place the quesadilla in the basket and air fry for 6 minutes, flipping halfway, until golden and cheese is melted.
  8. Remove, discard toothpicks, let cool a few minutes, then slice and serve with desired toppings.

Notes

  • Vegetarian option: omit chicken, add sautéed vegetables and extra cheese.
  • Add jalapeños or hot sauce for spice.
  • Substitute chicken with pork, beef, or tofu.
  • Try different cheese blends like pepper jack or cheddar-mozzarella.
  • Store leftovers in airtight container refrigerated up to 2 days.
  • Reheat in air fryer at 350°F for 3-4 minutes or skillet for 2-3 minutes per side.
  • Can freeze assembled quesadillas up to 3 months; air fry frozen at 400°F for 8-10 minutes.
