Ingredients

  • 1/2 cup buffalo sauce (adjust spice level to preference)
  • 1 cup shredded cheese (cheddar or mozzarella)

  • Egg roll wrappers

Instructions:

  1. Prepare the Filling: In a large bowl, mix shredded chicken, buffalo sauce, shredded cheese, and chopped green onions. Stir to coat the chicken evenly.
  2. Assemble the Egg Rolls: Lay an egg roll wrapper flat on a clean surface. Spoon 2-3 tablespoons of the buffalo chicken mixture in the center. Fold the bottom corner over the filling, then fold in the sides and roll tightly. Seal the edge with a bit of water.
  3. Air Fry the Egg Rolls: Preheat the air fryer to 375°F (190°C). Lightly spray the egg rolls with cooking spray and place them in a single layer in the air fryer basket. Cook for 10-12 minutes, flipping halfway, until golden brown and crispy.
  4. Serve & Enjoy: Let the egg rolls cool slightly before serving with ranch or blue cheese dressing.
