A hearty, delicious casserole made with crescent rolls, eggs, cheese, and optional ingredients like sausage, bell peppers, and green onions. Perfect for family breakfasts or brunches.

Ingredients

1 can of crescent rolls

6 large eggs

1/2 cup of milk

1 cup of shredded cheese (cheddar or your choice)

1/2 cup of cooked breakfast sausage (optional)

1/2 cup of diced bell peppers (optional)

1/4 cup of chopped green onions (optional)

Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9x13-inch baking dish with non-stick spray or butter.
  3. Unroll the crescent rolls and lay them out flat on the bottom of the prepared baking dish, pressing the seams together to form a crust.
  4. In a bowl, whisk together the eggs and milk. Season with salt and pepper.
  5. If using, add cooked sausage, diced bell peppers, and green onions to the egg mixture. Stir to combine.
  6. Pour the egg mixture over the crescent rolls in the baking dish. Sprinkle the shredded cheese evenly over the top.
  7. Bake for 25–30 minutes, or until the eggs are fully set and the top is golden brown.
  8. Let the casserole cool for a few minutes before serving.

Notes

  • Meatless: Leave out the sausage or any other meat to create a vegetarian version. Add extra veggies like mushrooms or spinach.
  • Spicy: Add diced jalapeños or hot sauce to the egg mixture for a spicy kick.
