This quick and refreshing Spaghetti Salad is the perfect side dish for potlucks, BBQs, and easy weeknight dinners. Made with spaghetti, fresh veggies, olives, feta cheese, and a tangy homemade Italian dressing, it’s a deliciously light and flavorful pasta salad. Plus, it’s ready in just 20 minutes!

Ingredients

  • 16 oz spaghetti
  • ¼ cup lemon juice (freshly squeezed)
  • ¼ cup extra virgin olive oil
  • 1 tablespoon Italian seasoning
  • 1 tablespoon honey
  • Salt and pepper to taste
  • 12 oz cherry tomatoes (red and yellow, halved)
  • 2 medium cucumbers (sliced)
  • ⅓ cup red onion (chopped)
  • ⅓ cup black olives (sliced)
  • ⅓ cup green olives (sliced)
  • 4 oz crumbled feta cheese

Instructions

  • Cook the Pasta – Cook spaghetti according to package instructions. Drain and rinse under cold water to stop the cooking process.
  • Make the Dressing – In a large bowl, whisk together olive oil, lemon juice, honey, Italian seasoning, salt, and pepper.
  • Combine the Veggies – Add cherry tomatoes, cucumbers, onions, and olives to the bowl. Toss everything well.
