Ingredients
2 lb hot breakfast sausage
1 (30-32oz) bag frozen tater tots
1 tsp salt
1/2 tsp pepper
1/4 tsp garlic powder
1/4 tsp onion powder
1-1/2 cups shredded cheddar cheese
1/2 cup mozzarella cheese
8 eggs
2 cups milk
Instructions
Preheat the oven to 350ºF. Lightly spray a 9×13-inch baking pan with cooking spray.
In a large skillet, cook the sausage over medium heat until it is no longer pink. Drain the fat.
In a large bowl, toss together the tater tots, cooked sausage, and both shredded cheeses.
Transfer the mixture to the prepared 9×13-inch pan.
In a separate bowl, whisk together the eggs, salt, pepper, garlic powder, onion powder, and milk.
Pour the egg mixture over the tater tot mixture in the baking pan.
(Optional) If you’re baking later, cover the pan and refrigerate it at this point.
Bake uncovered for 60 – 70 minutes, or until the eggs are set and the casserole is golden brown on top.

This casserole can be made ahead of time and refrigerated for up to 24 hours before baking.
