Strawberry Lemon Blondies are a refreshing twist on the classic blondie, blending buttery, chewy texture with the zesty tang of lemon and the sweetness of fresh strawberries. Perfect for spring and summer occasions.

Ingredients

1 1/2 cups all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, melted

3/4 cup light brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

1 tablespoon lemon zest

1/4 cup fresh lemon juice

1 1/4 cups fresh strawberries, diced

1 tablespoon all-purpose flour (for coating the strawberries)

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper or lightly grease it.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a separate large bowl, whisk the melted butter and brown sugar until smooth and well combined.
  4. Beat in the eggs, one at a time, followed by the vanilla extract, lemon zest, and lemon juice.
  5. Gradually add the dry ingredients to the wet mixture, stirring until fully combined.
  6. Toss the diced strawberries with 1 tablespoon of flour to prevent them from sinking in the batter, then gently fold them into the blondie batter.
  7. Pour the batter into the prepared pan and spread it evenly.
  8. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the blondies to cool completely before slicing and serving.
