These strawberry cinnamon rolls are a delightful twist on the classic cinnamon rolls. The combination of sweet, juicy strawberries and the warm, spiced cinnamon filling creates a deliciously unique treat. Soft, fluffy dough paired with a creamy glaze makes these rolls irresistible.

Ingredients

1 cup warm milk (110°F/45°C)

2 ¼ teaspoons active dry yeast

½ cup granulated sugar

1/3 cup unsalted butter, melted

1 teaspoon salt

2 large eggs

4 cups all-purpose flour

1 teaspoon vanilla extract

2 teaspoons ground cinnamon

1 ½ cups fresh strawberries, chopped

1/3 cup brown sugar

2 tablespoons unsalted butter, softened

1 cup powdered sugar

2 tablespoons milk (for glaze)

Instructions

  1. In a small bowl, combine warm milk and yeast. Let it sit for 5 minutes until it becomes frothy.
  2. In a large bowl, mix the melted butter, sugar, eggs, and vanilla extract. Add the yeast mixture and stir. Gradually add the flour, mixing until a dough forms.
  3. Knead the dough on a lightly floured surface for about 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover it with a kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
  4. In a small bowl, mix together brown sugar, cinnamon, and softened butter to create the cinnamon-sugar mixture.
  5. Once the dough has risen, punch it down and roll it out into a large rectangle (about 12 x 18 inches). Spread the cinnamon-sugar mixture evenly over the dough, leaving about a 1-inch border around the edges. Sprinkle the chopped strawberries on top.
  6. Carefully roll up the dough lengthwise into a tight log.
  7. Slice the dough into 12 equal rolls using a serrated knife or dental floss. Place the rolls in a greased baking dish, ensuring they’re close together.
  8. Cover the rolls with a kitchen towel and let them rise again for about 30 minutes.
  9. Preheat the oven to 350°F (175°C). Bake the rolls for 25-30 minutes, or until golden brown.
  10. While the rolls are baking, whisk together powdered sugar and 2 tablespoons of milk until smooth. Adjust consistency as needed.
  11. Once the rolls are done, remove them from the oven and drizzle the glaze over the warm rolls before serving.

Notes

  • Store leftover rolls in an airtight container at room temperature for up to 2 days, or refrigerate for up to 1 week.
  • Reheat individual rolls in the microwave for 15-20 seconds or in the oven at 350°F (175°C) for about 10 minutes.
  • For a tangy twist, add cream cheese to the glaze by beating 2 oz with powdered sugar and milk until smooth.
  • Frozen strawberries can be used, but be sure to thaw and drain them before use.
  • If using a bread machine, follow the manufacturer's instructions for making dough, then proceed with the rolling and filling steps.
