Smashed potatoes are a comforting, crispy, and creamy side dish that combines the softness of mashed potatoes with the crispy edges of roasted potatoes. Perfect for any occasion and easily customizable with seasonings.

Ingredients

1.5 lbs Baby potatoes

Olive oil (for drizzling)

Salt

Black pepper

Garlic powder (optional)

Fresh herbs (optional, like rosemary or thyme)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and scrub the baby potatoes thoroughly.
  3. Place the potatoes in a large pot and cover with water. Add a pinch of salt and bring to a boil.
  4. Once boiling, cook the potatoes for about 10-12 minutes, or until they’re fork-tender.
  5. Drain the potatoes and let them cool for a few minutes.
  6. Place the cooked potatoes on a baking sheet lined with parchment paper.
  7. Using a potato masher or the bottom of a glass, gently smash each potato to flatten it slightly.
  8. Drizzle the smashed potatoes with olive oil and sprinkle with salt, pepper, and any additional seasonings like garlic powder or herbs.
  9. Bake for 20-25 minutes, or until the potatoes are golden and crispy around the edges.
  10. Serve hot, garnished with extra herbs if desired.

  • For cheesy smashed potatoes, top with shredded cheese before baking.
  • For herb butter smashed potatoes, drizzle melted herb-infused butter after baking.
