A rich and savory slow-cooked chicken dish in a creamy peanut sauce that's slightly sweet and perfect for busy days. Served over rice or veggies, it’s a one-pot meal that’s easy to prepare and incredibly tasty.

Ingredients

4 boneless, skinless chicken breasts

1 cup peanut butter (creamy or chunky)

1/2 cup soy sauce

1/4 cup honey

2 cloves garlic, minced

1 tablespoon grated fresh ginger

1/4 teaspoon red pepper flakes (optional, for heat)

1 tablespoon rice vinegar

1/4 cup chicken broth

1 tablespoon sesame oil

Salt and pepper to taste

Chopped cilantro and crushed peanuts for garnish (optional)

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. In a bowl, whisk together the peanut butter, soy sauce, honey, garlic, ginger, rice vinegar, chicken broth, sesame oil, and red pepper flakes (if using). Season with salt and pepper to taste.
  3. Pour the peanut sauce mixture over the chicken breasts, ensuring they are evenly coated.
  4. Cover and cook on low for 6-7 hours or until the chicken is fully cooked and tender.
  5. Once cooked, remove the chicken breasts and shred them using two forks.
  6. Return the shredded chicken to the slow cooker and stir it into the sauce.
  7. Serve over steamed rice or with your favorite vegetables. Garnish with chopped cilantro and crushed peanuts, if desired.

Notes

  • Serve with rice, quinoa, cauliflower rice, sautéed vegetables, or a fresh salad.
  • To make it spicier, increase red pepper flakes or add chili paste or sriracha.
  • Use tamari or coconut aminos for a gluten-free alternative to soy sauce.
  • Can be made ahead of time and refrigerated for 1-2 days or frozen for up to 3 months.
  • If the sauce thickens after refrigerating, add chicken broth or water to thin it before reheating.
