This one-pan sausage, onion, and bell peppers over rice recipe is a budget-friendly, family-favorite meal. Smoky sausage and tender-crisp vegetables are simmered together and served over fluffy rice for a flavorful and easy dinner.

Ingredients

1 lb smoked sausage, sliced into 1/4-inch rounds

1 large green bell pepper, sliced

1 medium yellow bell pepper, sliced (optional)

1 large yellow onion, sliced

2 tablespoons olive oil or butter

1 teaspoon garlic powder

1 teaspoon black pepper

1/2 teaspoon salt

1 teaspoon Cajun seasoning (optional)

2 cups cooked white rice

Instructions

  1. In a large skillet, heat olive oil or butter over medium heat until hot.
  2. Add smoked sausage slices and cook for 4–5 minutes per side, until browned. Remove and set aside.
  3. Add onions and bell peppers to the skillet. Sauté for 6–8 minutes until softened and slightly charred.
  4. Return sausage to the pan. Add garlic powder, black pepper, salt, and Cajun seasoning. Stir well to combine.
  5. Cook everything together for another 2–3 minutes to let flavors combine. Serve hot over white rice.
