Ingredients

4 tablespoon butter

2 tablespoon olive oil

1 teaspoon garlic powder

1 cup panko breadcrumbs

⅔ cup grated Parmesan cheese

2 teaspoon Italian seasoning

1 teaspoon kosher salt

½ teaspoon ground pepper

1 lb boneless skinless chicken breasts, sliced into cutlets

Chopped parsley or basil to taste, optional

Instructions

  1. Preheat the oven to 425°F. Line a baking sheet with parchment paper.
  2. In a shallow bowl, combine the butter, olive oil, and garlic powder. Microwave for 30 seconds or until the butter melts. Whisk with a fork until smooth.
  3. In another shallow bowl, mix the panko breadcrumbs, grated Parmesan cheese, Italian seasoning, salt, and pepper.
  4. Butterfly the chicken breasts by slicing them horizontally through the center to create two thinner pieces.
  5. Dip each chicken cutlet into the butter mixture, then coat both sides with the breadcrumb-Parmesan mixture, pressing to adhere the coating.
  6. Arrange the coated chicken on the prepared baking sheet. Repeat with the remaining chicken.
  7. Bake the chicken for 20 minutes, flipping halfway through. Check the chicken’s internal temperature with a thermometer to ensure it has reached 165°F.
  8. Garnish with chopped parsley or basil, if desired. Serve immediately.
