These No Bake S'mores Cheesecake Bars are the ultimate summer treat! Combining all the delicious flavors of s'mores without the need for a campfire or oven, they feature a graham cracker crust, marshmallow cheesecake filling, milk chocolate ganache, and toasted marshmallow topping.

Ingredients

1 1/2 cups graham cracker crumbs

1/4 cup granulated sugar

8 tbsp unsalted butter

24 oz cream cheese, softened

2 tbsp heavy whipping cream

2 cups miniature marshmallows

1 tsp vanilla extract

1/2 cup powdered sugar

9.3 oz milk chocolate bars (6 - 1.55 oz bars)

1/3 cup heavy whipping cream

2 cups miniature marshmallows (for topping)

Instructions

  1. Spray a 9-inch baking pan with cooking spray and line with parchment paper.
  2. Combine graham cracker crumbs, sugar, and melted butter in a bowl. Press into the bottom of the prepared pan to form the crust. Refrigerate for 30 minutes.
  3. Beat the softened cream cheese until light and fluffy. Add heavy whipping cream and beat for another 2 minutes.
  4. Microwave the miniature marshmallows for 30 seconds and stir until melted. Add vanilla extract and mix into the cream cheese mixture.
  5. Gradually add powdered sugar and beat until combined. Pour over the chilled graham cracker crust. Smooth out the top and refrigerate for at least 4 hours.
  6. For the ganache, break chocolate bars into small pieces. Heat heavy whipping cream to scalding hot, pour over the chocolate, and stir until smooth. Pour over the chilled cheesecake layer and refrigerate for 30 minutes.
  7. Top with miniature marshmallows and toast under the broiler for 30 seconds or use a kitchen torch to toast.
  8. Slice into bars and serve chilled.

Notes

  • Can swap milk chocolate with dark or white chocolate for a different flavor.
  • Add chopped nuts to the crust for extra texture.
  • For added chocolate flavor, sprinkle mini chocolate chips on the cheesecake before adding the ganache.
  • Store in an airtight container in the fridge for up to 5 days.
