Start your morning off right with a savory and satisfying Mushroom Swiss Breakfast Grilled Cheese, combining fluffy scrambled eggs, sautéed mushrooms, and creamy Swiss cheese between two slices of garlic-buttered toast.

Ingredients

4 slices of bread (sourdough or your choice)

1 tablespoon butter, softened

1 teaspoon garlic powder

1 cup mushrooms, sliced

1 teaspoon olive oil

3 large eggs

Salt and black pepper, to taste

1 tablespoon milk or cream

4 slices Swiss cheese

Instructions

  1. Heat a skillet over medium heat and sauté the mushrooms in olive oil until golden brown and tender, about 5 minutes. Set them aside.
  2. Whisk together eggs, milk (or cream), salt, and pepper in a bowl.
  3. Pour the egg mixture into the same skillet and scramble until fully cooked, about 3–4 minutes. Remove from heat.
  4. Spread butter on one side of each slice of bread and sprinkle garlic powder evenly on the buttered sides.
  5. Place the buttered bread slices, buttered side down, in a separate skillet over medium heat and toast until golden brown, about 2-3 minutes per side.
  6. Assemble the sandwiches by layering scrambled eggs, sautéed mushrooms, and Swiss cheese on the non-buttered sides of two slices of bread. Top with another slice of bread, buttered side up.
  7. Grill the sandwiches in the skillet for 2-3 minutes per side, until the cheese has melted and the bread is golden and crispy.
  8. Serve immediately and enjoy!

  • Use different cheeses like cheddar, gouda, or provolone for a unique twist.
  • To make it healthier, opt for whole-grain bread and use less butter.
