Lemon Blueberry Bread is a delightful treat that combines the zesty flavors of lemon with the sweetness of blueberries, creating a moist, flavorful bread perfect for any time of day.

Ingredients

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

3/4 cup granulated sugar

2 large eggs

1/2 cup sour cream

1/4 cup fresh lemon juice

Zest of 1 lemon

1 teaspoon vanilla extract

1 cup fresh blueberries (or frozen, if needed)

1 tablespoon all-purpose flour (for coating the blueberries)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large mixing bowl, cream the softened butter and sugar together until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition.
  5. Stir in the sour cream, lemon juice, lemon zest, and vanilla extract.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. In a small bowl, toss the blueberries with 1 tablespoon of flour to coat them. Gently fold the blueberries into the batter.
  8. Pour the batter into the prepared loaf pan and spread it evenly.
  9. Bake for 60-70 minutes, or until a toothpick inserted into the center of the bread comes out clean.
  10. Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  11. Optional: For an extra burst of lemon flavor, drizzle with a lemon glaze once the bread has cooled.

  • If using frozen blueberries, do not thaw them to prevent them from bleeding color into the bread.
