Ingredients

4 boneless, skinless chicken breasts

1 cup high-quality BBQ sauce

2 tablespoons soy sauce

2 tablespoons brown sugar

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon ground ginger

1 1/2 cups fresh pineapple chunks

1 red bell pepper, diced

1 red onion, sliced into wedges

2 tablespoons olive oil

Salt and pepper to taste

Fresh cilantro or parsley for garnish

Instructions

  1. In a large bowl, combine the BBQ sauce, soy sauce, brown sugar, garlic powder, smoked paprika, and ground ginger. Mix well to combine. Add the chicken breasts to the bowl and coat them evenly with the marinade. Cover and refrigerate for at least 30 minutes, or overnight for deeper flavor.
  2. Preheat your grill to medium-high heat or oven to 400°F (200°C). Tear off large sheets of heavy-duty aluminum foil and lightly coat them with olive oil.
  3. Place one marinated chicken breast in the center of each foil sheet. Arrange the pineapple chunks, red bell pepper, and onion around the chicken. Drizzle with more olive oil, and season with salt and pepper to taste.
  4. Fold the foil over the ingredients and securely seal the packet by folding the edges tightly.

  6. For baking, place the packets on a baking sheet and bake at 400°F (200°C) for 20-25 minutes, checking the chicken’s internal temperature at 165°F (74°C).
  7. After cooking, let the packets rest for 5 minutes before opening to retain juices. Garnish with fresh cilantro or parsley.
