Ingredients

2 cups all purpose flour

2 cups sugar

3/4 cup cocoa powder

2 tsp baking powder

1 1/2 tsp baking soda

1 tsp salt

1 cup milk

1/2 cup oil

2 eggs

2 tsp vanilla

1 cup boiling water

1/2 cup butter softened

1/2 cup cocoa powder

4 cups powdered sugar

1 tsp vanilla

1 pinch salt

6-8 Tbsp milk

Instructions

  1. Preheat the oven to 350°F and line two 9" round pans with parchment paper. Spray with non-stick spray to prevent sticking.
  2. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the milk, oil, eggs, and vanilla to the dry ingredients and whisk until smooth.
  4. Gradually stir in the boiling water until the batter is smooth and well combined.
  5. Divide the batter evenly between the two prepared pans.
  6. Bake at 350°F for 30-35 minutes or until a toothpick inserted into the center of the cakes comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes, then invert onto cooling racks to cool completely.
  8. (Optional) Wrap each cake in plastic wrap and freeze for easier frosting.
  9. Once cooled, place one layer of the cake on a cake stand or serving plate. Spread about 1 cup of frosting on top of this layer.
  10. Place the second layer of cake on top of the frosting. Frost the top and sides of the cake with the remaining chocolate frosting.
  11. Serve immediately or cover and let sit overnight for the flavors to meld.

Notes

  • To make this cake gluten-free, substitute the all-purpose flour with a 1:1 gluten-free flour blend.
  • You can use vanilla buttercream or cream cheese frosting for a different twist.
  • The cake layers freeze well and can be frosted on the day you plan to serve it.
  • Ensure the butter for frosting is softened to room temperature for the smoothest result.
  • If your frosting is too thin, add more powdered sugar a little at a time until you reach your desired thickness.
  • This cake is perfect for birthdays, holidays, or any special celebration.
