Hobo Stew is a simple, hearty one-pan meal made with ground beef, onions, and potatoes. Perfect for a cozy family dinner or a quick weeknight fix.

Ingredients

1 lb ground beef

1 cup chopped onion

3 to 4 medium red potatoes

Instructions

  1. Boil the red potatoes in a large pot of water until fork-tender, about 15–20 minutes. Drain, let cool slightly, then peel and chop into bite-sized pieces.
  2. In a large skillet over medium heat, cook the ground beef and chopped onion for 6–8 minutes, until the beef is browned and onions are soft. Drain excess grease.
  3. Mix in the cooked potatoes and stir to combine. Serve hot. Optional: Add hot sauce or shredded cheddar cheese.

Notes

  • Add canned corn, peas, or carrots for extra nutrition.
  • Use ground turkey or sausage instead of beef for a flavor twist.
  • Mix in taco seasoning or chili powder for a Southwestern version.
  • Top with shredded cheese and broil for 2–3 minutes for a cheesy finish.
  • Add a can of diced tomatoes or tomato sauce for a richer stew.
  • Store leftovers in the fridge for up to 4 days or freeze for up to 3 months.
