This Hobo Casserole is a hearty and comforting dish made with layers of seasoned ground beef, tender potatoes, and melty cheese. Perfect for busy nights and budget-friendly meals, it's a family favorite packed with flavor and minimal effort.

Ingredients

1 lb ground beef

45 medium potatoes, thinly sliced

1 tbsp olive oil

1 medium onion, chopped

2 cloves garlic, minced

½ cup beef broth

¼ cup milk (optional)

1 tsp Italian seasoning

½ tsp paprika

Salt & pepper, to taste

1 ½ cups shredded cheddar cheese

½ cup grated Parmesan cheese

Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C). Thinly slice the potatoes to ¼-inch thickness.
  2. Heat olive oil in a skillet over medium heat. Sauté onions and garlic until fragrant.
  3. Add ground beef, season with Italian seasoning, paprika, salt, and pepper, and cook until browned.
  4. Grease a baking dish and layer half of the potatoes, followed by half of the cooked beef and half of the cheddar cheese.
  5. Repeat the layers, then pour beef broth (and milk, if using) over the top.
  6. Cover with foil and bake for 35-40 minutes.
  7. Remove foil, top with Parmesan cheese, and bake uncovered for 10 more minutes until golden brown.
  8. Let the casserole rest for 5 minutes before slicing. Garnish with fresh parsley and serve warm.
