These high protein pizza rolls are packed with lean beef, pepperoni, rich tomato sauce, and melty mozzarella, all wrapped in a soft tortilla and toasted until golden and crisp. They are satisfying, flavorful, and perfect for meal prep or a protein-packed family meal.

Ingredients

  • Spray oil
  • 1kg (2.2lb) lean beef mince (5% fat)
  • 150g (5.2oz) pepperoni, roughly chopped
  • 2 tsp (8g) onion powder
  • 2 tsp (8g) garlic powder
  • 2 tsp (8g) smoked paprika
  • 2 tsp (4g) dried oregano
  • 400g (14oz) crushed tomatoes
  • 2 tbsp (30g) concentrated tomato paste
  • 15g (0.5oz) flat leaf parsley, roughly chopped
  • Salt
  • Cracked black pepper
  • 6 wraps of choice
  • 250g (7.05oz) low-fat mozzarella cheese, grated
  • Sauce of choice

Instructions

  1. In a bowl, combine the onion powder, garlic powder, smoked paprika, and dried oregano.
  2. Place a pan over medium-high heat and lightly spray with oil. Add the lean beef mince and cook for about 5 minutes until no longer pink. Season with salt and cracked black pepper.
  3. Add the chopped pepperoni and the mixed herbs and spices. Cook for 2 minutes until slightly golden and fragrant.
  4. Stir in the crushed tomatoes, tomato paste, and parsley. Mix well, bring to a simmer, and cook for 2 to 3 minutes until thickened. Remove from heat.
  5. Divide the beef mixture evenly across the six wraps. Sprinkle grated mozzarella over each and add sauce if desired.
  6. Wrap each tortilla tightly into a roll and place on a baking tray or in an air fryer basket. Lightly spray with oil.
  7. For oven baking, cook at 200°C (400°F) for 8 to 10 minutes until golden and crisp. For air frying, cook at 180°C (350°F) for 8 to 10 minutes. Allow to cool slightly before serving.

  • Swap lean beef for ground turkey or chicken for a different protein option.
  • Use whole wheat or high-fiber wraps for added nutritional value.
  • Add finely chopped vegetables like bell peppers, mushrooms, or onions for extra nutrients.
