German Carrot and Apple Salad is a crisp, refreshing side dish that combines sweet carrots and apples with crunchy walnuts, bright lemon juice, and fresh scallions for a light and flavorful no-cook dish.

Ingredients

2 cups carrots (grated)

1 cup apples (grated or cubed)

1/2 cup walnuts (coarsely chopped)

1 tbsp olive oil

1 tbsp lemon juice (freshly squeezed)

2 tbsp water

2 tbsp scallions (minced)

Salt (to taste)

Black pepper (to taste)

Instructions

  1. Coarsely grate the carrots and apples. If cubing the apples, cut them into small, bite-sized pieces.
  2. Coarsely chop the walnuts and mince the scallions.
  3. Place the grated carrots, apples, walnuts, and scallions into a large mixing bowl.
  4. Add the water, olive oil, and freshly squeezed lemon juice. Season with salt and black pepper to taste.
  5. Toss everything together until well combined. Serve immediately or chill briefly before serving.

Notes

Add raisins or a drizzle of honey for extra sweetness.

Substitute walnuts with pecans or sunflower seeds for a different texture or nut-free option.

For a creamier version, mix a spoonful of Greek yogurt into the dressing.

Store in an airtight container in the refrigerator for up to 2 days.
