Ingredients

2 large sweet potatoes

3 large eggs, beaten

1 cup grated Parmesan

1 teaspoon salt

1 teaspoon coarse ground pepper

1 teaspoon garlic powder

1 teaspoon dried parsley

1 teaspoon dried oregano

1 teaspoon paprika

¼ teaspoon cayenne pepper

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. Wash and quarter the sweet potatoes into wedges.
  3. In a medium bowl, beat the eggs until well combined. Set aside.
  4. In another medium bowl, mix together the Parmesan, salt, pepper, garlic powder, dried parsley, dried oregano, paprika, and cayenne pepper.
  5. Dip each sweet potato wedge into the beaten eggs, then coat it in the Parmesan seasoning mixture. Shake off any excess seasoning.
  6. Arrange the coated wedges in a single layer on a foil-lined baking sheet.
  7. Bake for 20 minutes, or until the coating is golden brown and crispy.
  8. Remove from the oven and serve hot.
