Garlic Butter Lettuce, Tomato & Grilled Chicken Sandwich

A satisfying sandwich made with garlic butter, grilled chicken, fresh lettuce, tomato, and toasted bread. Perfect for any occasion!

Ingredients

8 slices thick-cut bread (Texas toast, sourdough, or your favorite hearty bread)

1/2 cup unsalted butter, softened

23 cloves garlic, finely minced

1 teaspoon dried Italian herbs (or a blend of parsley, oregano, and basil)

1/2 teaspoon red pepper flakes (optional, for heat)

2 boneless, skinless chicken breasts

Olive oil, for brushing

Salt and black pepper, to taste

12 large ripe tomatoes, sliced

Green leaf lettuce or Romaine leaves

Mayonnaise, for spreading

Optional: Slices of cheddar, provolone, or Swiss cheese; sliced avocado

Instructions

  1. Preheat a grill pan or outdoor grill to medium-high heat. Pat the chicken breasts dry and brush with olive oil. Season with salt and black pepper. Grill for 5–6 minutes per side or until the internal temperature reaches 165°F (75°C). Let rest for 5 minutes, then slice thinly.
  2. Combine softened butter, minced garlic, dried Italian herbs, and red pepper flakes in a small bowl. Stir well until the butter is aromatic.
  3. Spread a generous layer of garlic butter on one side of each slice of bread. Heat a skillet over medium heat and toast the bread slices, buttered side down, for 2–3 minutes until golden brown and crispy.
  4. Wash and dry lettuce leaves. Slice tomatoes and season with salt and pepper. Prepare optional cheese or avocado.
  5. Spread mayonnaise on the untoasted side of each bread slice. Layer lettuce, tomato, and grilled chicken slices. Add optional cheese or avocado. Top with another slice of bread, toasted side out. Press gently and slice in half.

  • Best served immediately for crispy bread.
  • Store leftovers separately (chicken in an airtight container for 3 days, garlic butter for 5 days).
  • Use gluten-free bread for a gluten-free option.
  • Substitute mayonnaise with pesto, hummus, or Greek yogurt for different flavors.
