These Easy Scalloped Potatoes feature thinly sliced potatoes layered with a creamy, cheesy sauce and baked to golden perfection. This classic comfort food is perfect for family dinners, holiday gatherings, or as a hearty side dish any time of the year.

Ingredients

8 cups potatoes (about 3 pounds), peeled and sliced thinly

4 tablespoons butter

½ cup diced onion

1 teaspoon minced garlic

6 tablespoons all-purpose flour

1 cup chicken broth

2 cups milk

Salt and pepper, to taste

½ teaspoon dried thyme

1 cup grated cheddar cheese

½ tablespoon fresh thyme

Fresh thyme for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  2. In a saucepan over medium heat, melt butter. Add diced onion and minced garlic; cook until softened.
  3. Stir in flour and cook for 2 minutes.
  4. Gradually whisk in chicken broth, then milk. Increase heat to medium and cook, stirring constantly, until the mixture boils and thickens.
  5. Season with salt, pepper, and dried thyme.
  6. Remove from heat and stir in grated cheddar cheese until melted.
  7. Layer half of the sliced potatoes in the prepared baking dish. Pour half of the cheese sauce over the potatoes.
  8. Repeat with remaining potatoes and sauce. Sprinkle fresh thyme on top.
  9. Cover with aluminum foil and bake for 45 minutes.
  10. Remove foil and bake for an additional 30 minutes, or until potatoes are tender and top is golden brown.
  11. Let stand for 10-15 minutes before serving. Garnish with additional fresh thyme if desired.

  • Use Yukon Gold or Russet potatoes for best texture and flavor.
  • Shred cheese from a block for smoother melting.
  • Assemble ahead and refrigerate up to 24 hours before baking.
