1 tablespoon butter

1 garlic clove, minced or pressed

1 teaspoon dried parsley (or 2 teaspoons fresh parsley)

¼ teaspoon pepper

Instructions

  1. Strain half of the liquid from the can of corn.
  2. Pour the corn with the remaining liquid into a small saucepan over medium heat.

  5. Taste and adjust seasonings as needed. If using fresh parsley, stir it in at this point.
  6. Serve warm and enjoy!

Notes

  • Spicy Kick: Add diced jalapeño or a sprinkle of cayenne pepper for heat.
  • Creamy Texture: Stir in cream cheese after cooking for a rich, creamy dish.
  • Citrus Twist: Add a splash of lime juice and chopped cilantro for a fresh, zesty flavor.
  • Crunchy Topping: Top with crispy bacon pieces or fried onions for added texture.
  • Herb Infusion: Use brown butter and roasted garlic to deepen the flavor profile.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently on the stovetop over low heat, adding a splash of water or broth if needed.
  • To make vegan, substitute butter with plant-based alternatives like olive oil or vegan butter.
