This Easy Buffalo Chicken Dip combines the tangy heat of buffalo sauce with creamy cheese and sour cream, making it the perfect appetizer for any gathering. It's quick to make, especially with store-bought rotisserie chicken, and always a hit.

Ingredients

2 cups diced chicken (rotisserie)

8 oz softened cream cheese

2/3 cup sour cream

2/3 cup buffalo sauce

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

2 diced green onions

1 tsp garlic powder

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a bowl, combine the diced chicken and buffalo sauce. Set aside.
  3. In a separate medium bowl, blend the cream cheese, sour cream, and garlic powder using a hand mixer until fluffy.
  4. Add the buffalo chicken mixture, green onions, and half of the shredded cheddar cheese to the cream cheese mixture. Stir well.
  5. Transfer the mixture to a greased 9x9 baking pan and top with the remaining cheddar and mozzarella cheese.
  6. Bake for 20 minutes, or until bubbly and golden on top.
  7. Serve with chips, crackers, baguette slices, or celery sticks. Garnish with parsley, green onions, or blue cheese crumbles if desired.

Notes

  • If you like extra heat, add chopped jalapeños or a dash of hot sauce.
  • For a heartier dip, add cooked bacon bits or shredded rotisserie turkey.
  • Vegan version: Use plant-based cream cheese, sour cream, and shredded vegan cheese.
  • If storing leftovers, keep in an airtight container for up to 3 days.
  • To reheat, microwave or bake at 350°F for 10-15 minutes.
