Ingredients

6 large eggs

0.5 cup full-fat Greek yogurt, unsweetened and plain

1 tablespoon baking powder

0.25 cup melted butter or coconut oil

0.25 teaspoon salt

0.5 teaspoon xanthan gum or psyllium husk powder

0.5 cup finely ground almond flour (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a loaf pan with parchment paper or grease it well.
  2. In a large mixing bowl, whisk together the eggs, Greek yogurt, and melted butter or coconut oil until smooth and fully combined.
  3. Add the baking powder, salt, and xanthan gum or psyllium husk powder. If using almond flour, stir it in at this stage. Mix until the batter is uniform.
  4. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  5. Bake for 35 to 45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  6. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack. Cool completely before slicing.
