Funnel cake bites are mini versions of the classic carnival treat, crispy on the outside and fluffy on the inside, dusted with powdered sugar. They are quick to make and perfect for snacking or parties.

Ingredients

2 cups all-purpose flour

1½ teaspoons baking powder

1 teaspoon ground cinnamon

¼ teaspoon ground nutmeg

¼ teaspoon salt

1½ cups milk

¼ cup granulated sugar

2 large eggs

1 teaspoon pure vanilla extract

Vegetable oil for frying

Powdered sugar for dusting

Instructions

  1. Beat the eggs until they are foamy and light in texture.
  2. Stir in the milk and vanilla extract with the eggs until well combined.
  3. In a separate bowl, whisk together the flour, baking powder, cinnamon, nutmeg, salt, and sugar.
  4. Pour the wet mixture into the dry ingredients and stir until the batter is smooth.
  5. In a heavy pot or deep skillet, heat about ¾ inch of vegetable oil to 375°F.
  6. Using a cookie scoop or spoon, drop spoonfuls of batter into the hot oil. Fry the bites until golden brown on both sides (about 1-2 minutes per side).
  7. Once crispy and golden, remove the bites from the oil and place them on paper towels to drain. While still warm, dust generously with powdered sugar.
  8. Enjoy your homemade carnival treat right away while they're warm and crispy!
