A no-bake, refreshing twist on classic tiramisu featuring creamy mascarpone, coffee-soaked ladyfingers, and vibrant raspberry puree, perfect for summer gatherings.

Ingredients

2 cups fresh raspberries

1/4 cup granulated sugar

1 tablespoon lemon juice

1 cup heavy cream

8 ounces mascarpone cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 package ladyfinger cookies

1/2 cup brewed coffee, cooled

Fresh raspberries, for garnish

Cocoa powder, for dusting

Instructions

  1. Prepare the Raspberry Puree: In a blender or food processor, combine raspberries, sugar, and lemon juice. Blend until smooth, then strain through a fine-mesh sieve to remove seeds. Set aside.
  2. Make the Mascarpone Cream: Beat the heavy cream in a mixing bowl until soft peaks form. In another bowl, whisk together mascarpone, powdered sugar, and vanilla extract until smooth. Gently fold the whipped cream into the mascarpone mixture until well combined.
  3. Assemble the Tiramisu: Briefly dip each ladyfinger into the cooled coffee, then arrange a layer in the bottom of a serving dish. Spread half of the mascarpone cream over the ladyfingers, drizzle with half of the raspberry puree, and repeat the layers.
  4. Chill: Cover and refrigerate the tiramisu for at least 4 hours, or overnight, to allow flavors to meld.
  5. Serve and Garnish: Before serving, garnish with fresh raspberries and a dusting of cocoa powder.

  • This tiramisu tastes better when made a day in advance, allowing flavors to meld.
  • Frozen raspberries can be used if thawed and drained properly.
  • For an adult twist, add raspberry liqueur or amaretto to the coffee before dipping ladyfingers.
  • Use gluten-free ladyfingers to make this dessert gluten-free.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Not recommended to freeze tiramisu as texture may change upon thawing.
